Makes: about 12–14 Laddoos
Ingredients
For the outer laddoo mixture:
• 1 cup hemp hearts
• ½ cup unsweetened shredded coconut
• 2 tablespoons coconut oil (softened)
• 2–3 tablespoons maple syrup or honey
• ½ teaspoon vanilla
• pinch of sea salt
• ¼ teaspoon cardamom (optional)
For the filling
• 6–7 soft Medjool dates, pitted and halved
For the coating
• 3 tablespoons raw cacao powder
• 1½ tablespoons melted coconut oil
• 1–2 teaspoons maple syrup.
Method:
Blend the hemp hearts and shredded coconut briefly until finely ground but not oily. Add the softened coconut oil, maple syrup or honey, vanilla, salt, and cardamom, then pulse until the mixture holds together when pressed. Take about a tablespoon of the mixture, flatten it in your palm, place half a date in the center, wrap the mixture around it, and roll gently into a ball.
For the cacao coating
Stir together the cacao powder, melted coconut oil, and maple syrup until smooth.
Dip or roll each laddoo in the chocolate mixture, then place on parchment paper.
Refrigerate for 20–30 minutes until firm.
Suggested upgrade for the best flavor: Place a tiny dab of almond or pistachio butter inside each date before wrapping it in the hemp-coconut mixture. A sprinkle of flaky sea salt on the cacao shell makes them taste especially good.
Store refrigerated for about 7–10 days, or freeze for longer storage.
