Black Bean, Date & Tahini Fudge, cut into squares

Rich, chocolatey, and naturally sweetened. Makes about 16 small squares.

Ingredients

  • 1 can (15 oz) black beans, drained, rinsed well, and patted dry
  • 1 cup soft Medjool dates, pitted and packed (about 10 to 12 large dates)
  • ⅓ cup well-stirred tahini
  • ½ cup unsweetened cacao powder
  • 2 tablespoons melted coconut oil, for a firmer set
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: chopped walnuts or flaky salt on top

Instructions

  1. If the dates are firm, soak them in hot water for 10 minutes, then drain thoroughly.
  2. Blend the dates and tahini in a food processor. Add the beans, cacao, coconut oil, vanilla, and salt.
  3. Process until completely smooth, stopping to scrape down the sides. The mixture should be thick. If needed, add water 1 teaspoon at a time, using as little as possible.
  4. Taste and blend in another date or two if you prefer sweeter fudge.
  5. Press into a parchment-lined loaf pan. Smooth the top and add your toppings.
  6. Freeze for 1 to 2 hours until firm, then cut into squares.

Storage

Refrigerate in a covered container for up to 4 days, or freeze for up to 2 months. Serve chilled. This is a soft, creamy fudge that firms up best in the freezer.
